Shrimp Over Linguine

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb dry linguine
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 green onion, chopped
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup dry wine
  • 1 (6 ounce) jar oil packed sun-dried tomatoes, drained and chopped
  • 1 (6 ounce) jar artichoke hearts, drained and chopped
  • 2 tablespoons capers
  • 2 tablespoons chopped fresh basil
  • 1/4 cup freshly grated parmesan cheese

Recipe

  • 1 cook pasta according to package,drain.
  • 2 heat oil in large skillet,over medium high heat,add garlic and onion,saute until soft,about 3 minutes.
  • 3 add shrimp and cook until opaque,about 2 minutes.
  • 4 add wine and cook until reduced by 1/2,about 2 minutes.
  • 5 add tomatoes,artichokes and capers.
  • 6 add basil and pasta,toss to coat well.
  • 7 transfer to serving platter and top with grated cheese.
