Shrimp Pasta

Ingredients
- Servings: 6
- 8 ounces pasta, your favorite (i like farfalle and penne)
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1/2 cup onion, chopped
- 2 lbs raw shrimp, peeled and deveined
- 2 (15 1/2 ounce) cans diced tomatoes
- 2 (15 1/2 ounce) cans water-packed artichoke hearts, drained
- 1/4 cup dry wine
- 1/4 cup fresh basil, chopped
- salt and pepper
- freshly grated parmesan cheese
Recipe
- 1 prepare pasta according to direction.
- 2 heat olive oil in a large saucepan over medium heat.
- 3 add garlic and onio. cook 2-3 minutes, stirring occasionally. be careful not to let the garlic burn!
- 4 add shrimp, wine, tomatoes, and artichoke hearts. cook until shrimp are pink/opaque, stirring occasionally, about 5 minutes.
- 5 combine pasta with shrimp mixture. add in chopped basil, stir well to combine, and cover pan.
- 6 let sit for about 2 minutes, or until basil wilts.
- 7 salt and pepper to taste.
- 8 serve hot with freshly grated parmesan cheese.
