Shrimp Pasta

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 8 ounces pasta, your favorite (i like farfalle and penne)
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1/2 cup onion, chopped
  • 2 lbs raw shrimp, peeled and deveined
  • 2 (15 1/2 ounce) cans diced tomatoes
  • 2 (15 1/2 ounce) cans water-packed artichoke hearts, drained
  • 1/4 cup dry wine
  • 1/4 cup fresh basil, chopped
  • salt and pepper
  • freshly grated parmesan cheese

Recipe

  • 1 prepare pasta according to direction.
  • 2 heat olive oil in a large saucepan over medium heat.
  • 3 add garlic and onio. cook 2-3 minutes, stirring occasionally. be careful not to let the garlic burn!
  • 4 add shrimp, wine, tomatoes, and artichoke hearts. cook until shrimp are pink/opaque, stirring occasionally, about 5 minutes.
  • 5 combine pasta with shrimp mixture. add in chopped basil, stir well to combine, and cover pan.
  • 6 let sit for about 2 minutes, or until basil wilts.
  • 7 salt and pepper to taste.
  • 8 serve hot with freshly grated parmesan cheese.
