Shrimp Monterey

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 -3 cloves garlic, minced
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 lbs shrimp, peeled and deveined
  • salt and pepper
  • 1/2 cup wine
  • 2 cups shredded monterey jack cheese
  • 2 tablespoons minced parsley

Recipe

  • 1 in a large skillet, saute the garlic in butter over medium heat.
  • 2 add the shrimp and saute for 4-5 minutes or until the shrimp are pink.
  • 3 using a slotted spoon, transfer the shrimp to a greased 11 x 7 inch baking dish.
  • 4 may sprinkle shrimp lightly with salt/pepper if desired.
  • 5 add the wine to the skillet; bring to a boil over medium heat.
  • 6 cook and stir for 5 minutes or until reduced.
  • 7 pour over shrimp.
  • 8 sprinkle cheese evenly over the shrimp.
  • 9 sprinkle with parsley.
  • 10 bake at 350 degrees, uncovered, for 10 minutes or until the cheese melts.
