Shrimp Monterey

Ingredients
- Servings: 6
- 2 -3 cloves garlic, minced
- 2 tablespoons butter or 2 tablespoons margarine
- 2 lbs shrimp, peeled and deveined
- salt and pepper
- 1/2 cup wine
- 2 cups shredded monterey jack cheese
- 2 tablespoons minced parsley
Recipe
- 1 in a large skillet, saute the garlic in butter over medium heat.
- 2 add the shrimp and saute for 4-5 minutes or until the shrimp are pink.
- 3 using a slotted spoon, transfer the shrimp to a greased 11 x 7 inch baking dish.
- 4 may sprinkle shrimp lightly with salt/pepper if desired.
- 5 add the wine to the skillet; bring to a boil over medium heat.
- 6 cook and stir for 5 minutes or until reduced.
- 7 pour over shrimp.
- 8 sprinkle cheese evenly over the shrimp.
- 9 sprinkle with parsley.
- 10 bake at 350 degrees, uncovered, for 10 minutes or until the cheese melts.
