Shrimp Monterey

Ingredients

- 2 garlic cloves, minced
- 2 tablespoons butter or 2 tablespoons margarine
- 2 lbs medium shrimp, uncooked, peeled and deveined
- 1/2 cup wine or 1/2 cup chicken broth
- 2 cups monterey jack cheese, shredded
- 2 tablespoons fresh parsley, minced
Recipe
- 1 in a skillet over medium heat, sauté garlic in butter for 1 minute.
- 2 add shrimp; cook for 4-5 minutes or until pink.
- 3 using a slotted spoon, transfer shrimp to a greased 11x7x2-inch baking dish; set aside and keep warm.
- 4 add wine or broth to the skillet; bring to a boil.
- 5 cook and stir for 5 minutes or until sauce is reduced.
- 6 pour over shrimp; top with cheese and parsley.
- 7 bake, uncovered, at 350° for 10 minutes or until cheese is melted.
