Shrimp Marinara Over Pasta

Ingredients

  • Servings: 2
  • 8 ounces linguine
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/4 teaspoon fresh ground black pepper
  • 3/4 lb large shrimp, peeled and deveined
  • salt

Recipe

  • 1 in a 10 inch skillet, heat oil over medium heat. add garlic and saute for about one minute.
  • 2 add herbs and seasonings, allowing dried herbs to "bloom" in the oil for a few seconds. add the tomatoes and their juices.
  • 3 stir and taste for seasoning. bring tomatoes to a simmer, cover, and simmer over medium-low heat while pasta cooks, about 10 minutes or so.
  • 4 meanwhile, cook pasta according to package directions.
  • 5 about five minutes before you are ready to serve, stir the shrimp into the tomato sauce and cook until shrimp are pink and firm, about 5 minutes.
  • 6 divide drained pasta into two pasta bowls and spoon sauce over pasta. serve at once.
