Ingredients

- 3 tablespoons peanut oil
- 1/2 red onion, finely chopped
- 2 carrots, peeled and cubed
- 1 cup zucchini, cubed
- 1 tablespoon shredded ginger
- 1 head garlic, finely shopped and sliced
- 1 (8 ounce) can baby corn, drained
- 2 cups medium shrimp, cooked and peeled
- 1/4 teaspoon black pepper
- 3 tablespoons soy sauce
- 1 cup snap peas
- 1 tablespoon cilantro, finely chopped
- 1/4 teaspoon salt
- 1/2 cup peanuts, salted and toasted
- 1 stalk green onion, finely chopped
Recipe
- 1 in a deep size wok add oil, add vegetables, little by little. always try to add the hardes cooking vegetables.
- 2 add ginger, cilantro and soy sauce.
- 3 make sure vegetables are "al dente".
- 4 add shrimp, (can be substituted for chicken, beef or lamb, your taste).
- 5 remove from heat.
- 6 add peanuts, season with a little bit of black pepper and salt.
- 7 (it will ideal with a bed of rice or the pasta of your choice).
