Garlic Skewered Shrimp

Ingredients
- 4 bamboo skewers, roughly 12-inches long
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons reduced sodium soy sauce
- 1 tablespoon sesame oil or 1 tablespoon vegetable oil
- 3 garlic cloves, minced
- 1/4 teaspoon red pepper flakes (optional)
- 3 green onions, cut into 1-inch pieces
Recipe
- 1 prepare grill or preheat broiler.
- 2 soak the bamboo skewers in water 20 minutes.
- 3 meanwhile, place shrimp in large plastic bag.
- 4 combine soy sauce, oil, garlic and red pepper in cup; mix well. pour into bag containing shrimp. close bag securely; turn to coat. marinate at room temperature 15 minutes.
- 5 drain shrimp; reserve marinade.
- 6 alternatively thread shrimp and onions onto skewers. place skewers on grid or rack of broiler pan. brush with reserved marinade; discard any remaining marinade.
- 7 grill, covered, over medium-hot coals or broil 5 to 6 inches from heat 5 minutes on each side or until shrimp are pink and opaque.
- 8 serve on letuce-lined plate with lemon wedges.
