Garlic Seafood Pasta

Ingredients

  • Servings: 4
  • 1 cup fresh basil leaf, lightly packed
  • 1/2 cup garlic and herb marinade (diana)
  • 1/4 cup olive oil
  • 2 tablespoons parmesan cheese, grated
  • 2 teaspoons lemon zest
  • 1 lb large scallop
  • 1 lb extra-large shrimp
  • 3/4 cup frozen peas, thawed
  • 1/2 cup chopped tomato
  • 1/2 cup green onion, sliced
  • 4 cups cooked linguine

Recipe

  • 1 preheat grill to high; grease grate well. pulse basil, marinade, parmesan, and lemon zest in a food processor or blender until basil is finely chopped.
  • 2 toss seafood with half the marinade mixture; reserve the remaining half.
  • 3 grill seafood, turning once for 4-5 minutes or until scallops and shrimp are opaque.
  • 4 toss hot seafood with reserved marinade mixture, peas, tomatoes, and green onions.
  • 5 serve over hot pasta.
