Shrimp Kung Ming

Ingredients
- Servings: 4
- 1 1/2 lbs shrimp, peeled and deveined
- 1 tablespoon sesame oil, plus extra for frying
- 2 egg whites
- 1/4 cup cornstarch
- 2 ounces mushrooms
- salt
- pepper
- 1/4 cup onion, green and minced
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 3 tablespoons dry sherry
- 1/4 cup chicken stock
- 1 teaspoon sugar
Recipe
- 1 marinate the shrimp with sesame oil, unbeaten egg , and half of the cornstarch.
- 2 let stand for 30 minutes or longer.
- 3 heat sesame oil in a wok and stir fry the shrimp briefly.
- 4 add mushrooms.
- 5 cook and toss, then season to taste with salt and pepper.
- 6 add beaten egg , toss and remove shrimp and mushrooms.
- 7 add green onions, ginger, garlic, wine, stock, sugar and remaining cornstarch.
- 8 toss and cook for 30 seconds.
- 9 add the shrimp and mushrooms and heat through.
- 10 serve on noodles.
