Shrimp Kung Ming

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs shrimp, peeled and deveined
  • 1 tablespoon sesame oil, plus extra for frying
  • 2 egg whites
  • 1/4 cup cornstarch
  • 2 ounces mushrooms
  • salt
  • pepper
  • 1/4 cup onion, green and minced
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 3 tablespoons dry sherry
  • 1/4 cup chicken stock
  • 1 teaspoon sugar

Recipe

  • 1 marinate the shrimp with sesame oil, unbeaten egg , and half of the cornstarch.
  • 2 let stand for 30 minutes or longer.
  • 3 heat sesame oil in a wok and stir fry the shrimp briefly.
  • 4 add mushrooms.
  • 5 cook and toss, then season to taste with salt and pepper.
  • 6 add beaten egg , toss and remove shrimp and mushrooms.
  • 7 add green onions, ginger, garlic, wine, stock, sugar and remaining cornstarch.
  • 8 toss and cook for 30 seconds.
  • 9 add the shrimp and mushrooms and heat through.
  • 10 serve on noodles.
