Edamame And Shrimp Salad

Ingredients

  • Servings: 4
  • 1 lb shrimp, cooked and shelled
  • 1 (12 ounce) package edamame, shelled
  • 3 -4 green onions
  • 1 cup whole grains and sesame pilaf mix, like kashi
  • 1/2 lemon, juiced
  • 2 teaspoons olive oil
  • 2 dashes tabasco sauce
  • 1/8 teaspoon salt
  • fresh ground pepper
  • 1/4 cup low-fat cheddar cheese, grated

Recipe

  • 1 cook the edamame in the microwave. toss the first nine ingredients together.
  • 2 garnish with grated cheese.
