Grilled Prawns With Tropical Fruit

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 24 uncooked large shrimp
  • 1/4 medium pineapple, chopped coarsely
  • 1 mango, coarsely chopped
  • 1 large banana, coarsely chopped
  • 1/4 cup loosley packed mint leaf
  • 2 tablespoons lime juice
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh parsley
  • 1 garlic clove
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil

Recipe

  • 1 make herb sauce.
  • 2 cook prawns on heated lightly oiled grill pan or your grill on the bbq until colour has changed and is cooked throughout.
  • 3 cook fruit on the same grill until slightly brown.
  • 4 combine prawns and fruit in a large bowl with the mint leaves and juice.serve into individual bowls and drizzle on herb sauce.
  • 5 blend the 1/2 cup of mint leaves and the remaining ingredients and process until combined. this will be the herb sauce.
