Grilled Prawns With Tropical Fruit

Ingredients

- 24 uncooked large shrimp
- 1/4 medium pineapple, chopped coarsely
- 1 mango, coarsely chopped
- 1 large banana, coarsely chopped
- 1/4 cup loosley packed mint leaf
- 2 tablespoons lime juice
- 1/2 cup fresh mint leaves
- 1/2 cup fresh parsley
- 1 garlic clove
- 2 tablespoons lime juice
- 1 tablespoon olive oil
Recipe
- 1 make herb sauce.
- 2 cook prawns on heated lightly oiled grill pan or your grill on the bbq until colour has changed and is cooked throughout.
- 3 cook fruit on the same grill until slightly brown.
- 4 combine prawns and fruit in a large bowl with the mint leaves and juice.serve into individual bowls and drizzle on herb sauce.
- 5 blend the 1/2 cup of mint leaves and the remaining ingredients and process until combined. this will be the herb sauce.
