Phad Thai

Ingredients

- 1/2 lb rice noodles
- 3 tablespoons thai chiles, minced
- 3 tablespoons garlic, minced
- 3 tablespoons fresh ginger, minced
- 1/4 cup fish sauce
- 1/4 cup sugar
- 2 tablespoons sugar
- 1/4 cup rice vinegar
- 2 tablespoons fish sauce
- 1 teaspoon paprika
- 1/2 lb shrimp or 1/2 lb chicken meat or 1/2 lb tofu, diced
- 2 eggs
- 1/2 lb bean sprouts
- 4 -5 green onions, sliced
- 1 carrot, shaved with peeler
- 1/2 cup peanuts, pounded fine
- 1 lime, sliced
Recipe
- 1 boil rice noodle for 10 min., drain.
- 2 fry chili, garlic and ginger in wok.
- 3 add protein and cook until done.
- 4 add rice noodles and mix.
- 5 mix sauce ingredients together, add to wok.
- 6 slip eggs under simmering sauce and noodles, cook until done.
- 7 add sprouts and green onions, mix well.
- 8 garnish with shaved carrots, peanuts and sliced lime.
