Shoreline Potato Salad

Ingredients

  • Servings: 4
  • 1 (20 ounce) package simply potatoes diced potatoes with onion
  • 3/4 cup red bell pepper, diced
  • 1/3 cup sun-dried tomato, chopped
  • 8 ounces frozen salad shrimp, thawed and patted dry
  • 2 hard-boiled eggs, peeled and chopped
  • 3/4 cup mayonnaise
  • 1/2 cup bleu cheese salad dressing
  • 2 garlic cloves, minced
  • 1/4 cup grated parmesan cheese
  • 3 tablespoons cilantro, chopped (or to taste)
  • 1 teaspoon lemon juice
  • 1 teaspoon hot sauce (or to taste)
  • 1/4 teaspoon sea salt (or to taste)
  • 1/4 teaspoon fresh ground black pepper (or to taste)
  • 2 tablespoons green olives, chopped, for garnish

Recipe

  • 1 cook potatoes according to instructions on package.
  • 2 let cool and place in a large bowl.
  • 3 add peppers, tomatoes, shrimp, and eggs. stir gently to mix.
  • 4 in a separate bowl, whisk together the mayonnaise, salad dressing, garlic, parmesan, cilantro, lemon juice, hot sauce, salt and pepper.
  • 5 pour over potato mixture and mix well.
  • 6 cover and refrigerate at least 1 hour.
  • 7 garnish with chopped olives before serving.
