Shrimp Salad

Ingredients
- Servings: 6
- 2 lbs shrimp, medium, small
- 1 1/4 green bell peppers, chopped
- 1 1/4 stalks celery, peeled, finely chopped
- 1/2 onion, chopped
- 1/2 cup relish, sweet
- 1/4 cup mayonnaise
- 1/8 cup mustard
- 1 tablespoon seasoning, gullah luv (or salt or pepper mix)
- 1 tablespoon sugar
- 3 eggs, boiled
Recipe
- 1 boil shrimp.remove shrimp from water and allow to cool. remove shells, heads and tails. devein. combine pepper,onions, relish, mustard, seasoning, mayonnaise, sugar, celery. mix well. add shrimp. taste. add gullah luv seasoning or salt and pepper mix if needed or desired. blend well. add chopped boiled eggs (optional) and mayonnaise, mustard and sugar as needed. taste. serve on a bed of lettuce. top with slices of tomatoes. sprinkle lightly with parsely.
