Shrimp Rice Pilaf - Dairy Free

Ingredients
- Servings: 4
- 3 tablespoons butter (or margarine)
- 2 garlic cloves, minced
- 1 lb shrimp, peeled and deveined
- 1 cup long grain rice
- 2 cups chicken stock
- 3 tablespoons dill
- salt and pepper
Recipe
- 1 in large saucepan melt butter over medium heat. add garlic and cook until tender but not browned (about 1 minute).
- 2 add shrimp and mix well, stir in rice.
- 3 pour in stock and bring to boil. then cover reduce heat to simmer for 20 - 25 minutes (until liquid is absorbed).
- 4 stir in dill, salt and pepper to taste.
