Shrimp Rice Pilaf - Dairy Free

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 tablespoons butter (or margarine)
  • 2 garlic cloves, minced
  • 1 lb shrimp, peeled and deveined
  • 1 cup long grain rice
  • 2 cups chicken stock
  • 3 tablespoons dill
  • salt and pepper

Recipe

  • 1 in large saucepan melt butter over medium heat. add garlic and cook until tender but not browned (about 1 minute).
  • 2 add shrimp and mix well, stir in rice.
  • 3 pour in stock and bring to boil. then cover reduce heat to simmer for 20 - 25 minutes (until liquid is absorbed).
  • 4 stir in dill, salt and pepper to taste.
