Shrimp Rice Salad

Ingredients
- Servings: 8
- 1 cup cooked baby shrimp
- 3 cups cooked rice
- 1/4 cup sliced celery
- 1/4 cup pimento stuffed olive, sliced
- 1/4 cup chopped green pepper
- 1/4 cup minced onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons mayonnaise
- 1/2 cup french dressing
- 2 tomatoes, cut in wedges
Recipe
- 1 in a large bowl combine the shrimp, rice, celery, olives, green pepper and onion.
- 2 stir together salt, pepper, mayo and french dressing.
- 3 toss with ingredients in bowl.
- 4 cover and chill.
- 5 to serve, spoon salad onto crisp greens and garnish with tomato wedges.
