Shrimp Rice Salad

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 1 cup cooked baby shrimp
  • 3 cups cooked rice
  • 1/4 cup sliced celery
  • 1/4 cup pimento stuffed olive, sliced
  • 1/4 cup chopped green pepper
  • 1/4 cup minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons mayonnaise
  • 1/2 cup french dressing
  • 2 tomatoes, cut in wedges

Recipe

  • 1 in a large bowl combine the shrimp, rice, celery, olives, green pepper and onion.
  • 2 stir together salt, pepper, mayo and french dressing.
  • 3 toss with ingredients in bowl.
  • 4 cover and chill.
  • 5 to serve, spoon salad onto crisp greens and garnish with tomato wedges.
