Shrimp Quesadillas

Total Time: 19 mins Preparation Time: 15 mins Cook Time: 4 mins

Ingredients

  • Servings: 4
  • 8 flour tortillas (8-10" in dia)
  • 2 cups shredded monterey jack pepper cheese
  • 1 large tomato, chopped
  • 1/2 cup bacon, pieces cooked
  • 1 (4 ounce) package frozen cooked baby shrimp, rinsed and thawed

Recipe

  • 1 heat 10" non-stick skillet over med-high heat.
  • 2 place 1 tortilla in skillet and sprinkle with 1/4 cup cheese and 1/4 of tomato, bacon and shrimp.
  • 3 sprinkle with additional 1/4 cup cheese.
  • 4 top with another tortilla.
  • 5 cook 1-2 minutes or until bottom is golden brown; turn.
  • 6 cook 1-2 minutes longer or til bottom is golden brown.
  • 7 repeat 3 more times.
  • 8 cut each quesadilla into wedges.
  • 9 to keep quesadillas warm, place on a ungreased cookie sheet in oven.
