Skewered Shrimp With Pineapple Salsa

Ingredients

  • Servings: 2
  • 1/2 lb shrimp
  • 2 tablespoons mirin
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon soy sauce
  • 1/4 pineapple, diced
  • 1 small onion, diced
  • 1/4 teaspoon lime zest
  • 1/4 teaspoon lemon zest
  • 1/2 teaspoon grated ginger
  • salt and pepper
  • 1 dash tabasco sauce

Recipe

  • 1 make a marinade for the shrimp by combining: 1 tablespoon mirin, 1/2 teaspoon sesame oil and 1/2 teaspoon soy sauce in a bowl.
  • 2 clean and devein the shrimp. marinate the shrimp in a bowl with the above marinade for 10-15 minutes. then put on skewers and season with salt and pepper.
  • 3 make the salsa by combining 1/4 diced pineapple, 1 diced small onion, 1/4 teaspoon lime zest, 1/4 lemon zest, 1 tablespoon mirin, 1/2 teaspoon grated ginger, salt and pepper to taste, and a dash of tabasco. let the salsa marinate for 10-15 minutes.
  • 4 in a skillet over medium-high heat, grill the shrimp skewers and flambe with brandy to finish.
