Greek Shrimp And Feta Pasta

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 6 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon oregano
  • 1/2 cup dry wine
  • 1 teaspoon red pepper flakes
  • 2 cups cherry tomatoes, halved
  • 4 tablespoons parsley, finely chopped
  • 1 lb medium shrimp, peeled and cleaned
  • 1/4 lb feta cheese, crumbled
  • 1 lb spaghetti

Recipe

  • 1 in large pot, bring water to boil and add spaghetti. cook al dente.
  • 2 in a large skillet, saute onion until translucent over medium heat.
  • 3 add garlic and sauté 30 seconds.
  • 4 add bay leaf, oregano, wine and red pepper flakes. cook 3 minutes.
  • 5 add cherry tomatoes and parsley. cook until tomatoes just start to break down.
  • 6 add shrimp and cook 2 minutes, stirring to make sure that shrimp are turned.
  • 7 add 1/2 cup hot pasta water to shrimp. mix well.
  • 8 place pasta into large serving bowl and tope with shrimp mixture.
  • 9 sprinkle feta cheese over the top and serve.
