Greek Shrimp And Feta Pasta

Ingredients

- 6 tablespoons olive oil
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon oregano
- 1/2 cup dry wine
- 1 teaspoon red pepper flakes
- 2 cups cherry tomatoes, halved
- 4 tablespoons parsley, finely chopped
- 1 lb medium shrimp, peeled and cleaned
- 1/4 lb feta cheese, crumbled
- 1 lb spaghetti
Recipe
- 1 in large pot, bring water to boil and add spaghetti. cook al dente.
- 2 in a large skillet, saute onion until translucent over medium heat.
- 3 add garlic and sauté 30 seconds.
- 4 add bay leaf, oregano, wine and red pepper flakes. cook 3 minutes.
- 5 add cherry tomatoes and parsley. cook until tomatoes just start to break down.
- 6 add shrimp and cook 2 minutes, stirring to make sure that shrimp are turned.
- 7 add 1/2 cup hot pasta water to shrimp. mix well.
- 8 place pasta into large serving bowl and tope with shrimp mixture.
- 9 sprinkle feta cheese over the top and serve.
