Cranberry-pecan Shrimp Salad

Ingredients

  • Servings: 4
  • 1 1/2 cups cooked shrimp, chopped
  • 1 cup celery, chopped
  • 2/3 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup light mayonnaise
  • 2 tablespoons nonfat yogurt
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked pepper

Recipe

  • 1 combine shrimp, celery, cranberries, pecans, parsley, mayo, yogurt, lemon juice, salt and pepper in a large mixing bowl.
  • 2 cover and chill at least 2 hours, stirring occasionally.
