Smoked Ham Paella

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 1 red pepper, cored, seeded and sliced
  • 1 garlic clove, crushed
  • 200 g long grain rice
  • 180 g smoked ham, roughly diced
  • 900 ml chicken stock
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 100 g large shrimp
  • 100 g frozen peas
  • salt & freshly ground black pepper

Recipe

  • 1 heat the oil in a large frying pan and cook the onion for 3-4 minutes until softened and golden. add the red pepper, garlic and rice and stir fry for 1 minute. add the ham, stock, paprika and tumeric, bring to the boil and simmer for 12 minutes.
  • 2 stir in the prawns and peas and cook for a further 3-4 minutes, until the rice and vegetables are tender. season to taste, then serve immediately.
