Ingredients
- 2 cups cold simply potatoes sour cream and chive mashed potatoes (may also use plain, traditional, or garlic variety)
- 2 eggs, lightly beaten
- 1 tablespoon all-purpose flour
- 1 tablespoon oil
- 3 tablespoons shrimp or 3 tablespoons scallops, cooked and chopped roughly
Recipe
- 1 combine potatoes, eggs, flour, and cooked (chopped) seafood in a bowl.
- 2 heat oil in a skillet over medium-high heat.
- 3 fry potato mixture in skillet, pressing with a spatula to flatten evenly.
- 4 cover and cook until bottom is crispy, about 10 minutes.
- 5 invert onto a plate or platter and cut into four portions, then serve.
- 6 garnish: sprinkle with parmesan cheese or add a ½ teaspoon of sour cream; greek yogurt or crème fraiche to add richness to the pancakes.
