Silky Seafood Pancakes #sp5

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 cups cold simply potatoes sour cream and chive mashed potatoes (may also use plain, traditional, or garlic variety)
  • 2 eggs, lightly beaten
  • 1 tablespoon all-purpose flour
  • 1 tablespoon oil
  • 3 tablespoons shrimp or 3 tablespoons scallops, cooked and chopped roughly

Recipe

  • 1 combine potatoes, eggs, flour, and cooked (chopped) seafood in a bowl.
  • 2 heat oil in a skillet over medium-high heat.
  • 3 fry potato mixture in skillet, pressing with a spatula to flatten evenly.
  • 4 cover and cook until bottom is crispy, about 10 minutes.
  • 5 invert onto a plate or platter and cut into four portions, then serve.
  • 6 garnish: sprinkle with parmesan cheese or add a ½ teaspoon of sour cream; greek yogurt or crème fraiche to add richness to the pancakes.
