Shrimp, Tomato And Basil Pasta And Recipes For A Complete Meal

Ingredients

- 1 1/2 lbs medium shrimp, peeled, deveined and tails removed
- coarse salt
- fresh ground pepper
- 6 teaspoons olive oil, divided
- 2 garlic cloves, minced
- 14 1/2 ounces diced tomatoes with juice
- 2 cups water
- 1 pint grape tomatoes, halved
- 1/2 lb linguine
- 1 1/2 cups lightly packed fresh basil leaves, torn into small pieces
Recipe
- 1 season shrimp with salt and pepper.
- 2 in a large skillet, heat 4 teaspoons of the oil over high heat.
- 3 add shrimp and cook until opaque throughout, turning occasionally. about 3 minutes.
- 4 transfer shrimp to a bowl and set aside.
- 5 in the same skillet add remaining 2 teaspoons of oil and garlic.
- 6 cook over medium heat until fragrant. about 30 seconds.
- 7 add canned tomatoes and the juice along with the water.
- 8 bring to a boil.
- 9 reduce heat and simmer, stirring occasionally, until tomatoes have softened and are saucy. about 15 minutes or until desired thickness.
- 10 stir in grape tomatoes.
- 11 meanwhile in a large pot of boiling salted water, cook pasta until al dente.
- 12 drain and return pasta to pot.
- 13 add tomato sauce, shrimp and basil.
- 14 toss and serve immediately.
