Shrimp-and-pasta Salad -- Southern Living

Ingredients
- 8 ounces uncooked medium-size shell pasta
- 3/4 cup lemon-herb dressing with mint and tarragon
- 1 lb medium cooked shrimp (peeled and deveined)
- 1 large nectarine, cut into thin wedges
- 1 cup chopped seedless cucumber
- 1/4 cup fresh raspberry (optional)
- 1/2 cup fresh arugula (optional)
Recipe
- 1 cook pasta according to package directions; drain.
- 2 plunge into ice water to stop the cooking process; drain and place in a large bowl.
- 3 add 1/2 cup dressing, tossing to coat.
- 4 stir in shrimp, nectarine, and cucumber.
- 5 serve with remaining 1/4 cup dressing.
- 6 garnish, if desired.
