Shrimp-and-pasta Salad -- Southern Living

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 8 ounces uncooked medium-size shell pasta
  • 3/4 cup lemon-herb dressing with mint and tarragon
  • 1 lb medium cooked shrimp (peeled and deveined)
  • 1 large nectarine, cut into thin wedges
  • 1 cup chopped seedless cucumber
  • 1/4 cup fresh raspberry (optional)
  • 1/2 cup fresh arugula (optional)

Recipe

  • 1 cook pasta according to package directions; drain.
  • 2 plunge into ice water to stop the cooking process; drain and place in a large bowl.
  • 3 add 1/2 cup dressing, tossing to coat.
  • 4 stir in shrimp, nectarine, and cucumber.
  • 5 serve with remaining 1/4 cup dressing.
  • 6 garnish, if desired.
