Shrimp, Tortellini & Spinach

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 2 cups kraft zesty italian dressing
  • 1/4 cup roasted red pepper
  • 2 garlic cloves, minced
  • 1 (8 ounce) can diced fire-roasted tomatoes
  • 1 (12 ounce) package cooked shrimp
  • 1 (6 ounce) package baby spinach leaves
  • 1/4 cup fresh basil leaf
  • 2 tablespoons kraft shredded parmesan cheese

Recipe

  • 1 cook pasta as directed on package, omitting salt.
  • 2 meanwhile, heat dressing in large skillet on medium-high heat. add garlic; cook 1 minute add tomatoes and shrimp; mix well. bring just to boil. stir in spinach; cover. simmer 1 to 2 minute or until spinach is wilted, stirring occasionally.
  • 3 drain pasta. add to skillet with basil; simmer, uncovered, 3 to 4 minute or until sauce is thickened, stirring occasionally.
  • 4 serve topped with cheese.
