Prawns Margarite

Total Time: 51 mins Preparation Time: 45 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 1 lb prawns, peeled tails on
  • 2 tablespoons lime juice
  • 1 fluid ounce tequila
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon chopped spring onion
  • 1/2 cup heavy cream
  • cooked rice

Recipe

  • 1 marinate prawns in lime juice in glass container for an hour or so.
  • 2 heat pan.
  • 3 add a tbls butter to pan.
  • 4 heat to just before it smokes.
  • 5 add prawns and swirl quickly.
  • 6 carefully add tequila and let it flame off.
  • 7 add cream, cilantro and spring onion.
  • 8 reduce till thick about a minute or two.
  • 9 serve with cooked rice that has been molded in a ramikin.
  • 10 place prawns around the rice and pour sauce over.
