Make It Quick Shrimp-stuffed Avocado

Ingredients

- 4 ounces cooked peeled shrimp (any size)
- 2 tablespoons mayonnaise
- 1 tablespoon chopped fresh cilantro
- 1 lime, cut in four wedges
- salt and pepper
- 2 cups chopped romaine lettuce
- 1 teaspoon olive oil
- 1 avocado
Recipe
- 1 finely chop shrimp and place in a small bowl.
- 2 add mayonaise, cilantro & juice of 2 lime wedges.
- 3 season with salt & pepper.
- 4 in a medium bowl, toss lettuce with oil & juice from remaining 2 lime wedges.
- 5 divide lettuce between two plates.
- 6 cut avocados in half lengthwise, remove pit & peel.
- 7 place an avocado half on each plate and mound shrimp salad on top of it.
- 8 you can substitute tuna for the shrimp as well - just drain very well.
