Make It Quick Shrimp-stuffed Avocado

Ingredients

  • Servings: 2
  • 4 ounces cooked peeled shrimp (any size)
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped fresh cilantro
  • 1 lime, cut in four wedges
  • salt and pepper
  • 2 cups chopped romaine lettuce
  • 1 teaspoon olive oil
  • 1 avocado

Recipe

  • 1 finely chop shrimp and place in a small bowl.
  • 2 add mayonaise, cilantro & juice of 2 lime wedges.
  • 3 season with salt & pepper.
  • 4 in a medium bowl, toss lettuce with oil & juice from remaining 2 lime wedges.
  • 5 divide lettuce between two plates.
  • 6 cut avocados in half lengthwise, remove pit & peel.
  • 7 place an avocado half on each plate and mound shrimp salad on top of it.
  • 8 you can substitute tuna for the shrimp as well - just drain very well.
