Shrimp Creole

Ingredients

- 2 tablespoons butter
- 1 tablespoon flour
- 1 medium onion, minced
- 1 garlic clove, minced
- 1 green pepper, minced
- 1/2 cup celery, minced
- 1/2 cup okra, sliced
- 1 (16 ounce) can tomatoes, chopped
- 1 bay leaf
- 1 teaspoon dried parsley
- 1/2 teaspoon salt (to taste)
- 1/8 teaspoon pepper (to taste)
- 1/2 cup water
- 1/2 lb shrimp
- cooked rice
Recipe
- 1 in a large skillet, over medium-low heat, brown flour in butter.
- 2 add onion, garlic, green pepper, celery, and okra; sauté until tender.
- 3 stir in tomatoes, bay leaf, parsley and salt and pepper.
- 4 add 1/2 cup water, more if necessary.
- 5 stir in shrimp, bring to boil; reduce heat and simmer 5 minutes,or until shrimp is done.
- 6 remove bay leaf.
- 7 serve over hot rice.
