Shrimp Creole

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 medium onion, minced
  • 1 garlic clove, minced
  • 1 green pepper, minced
  • 1/2 cup celery, minced
  • 1/2 cup okra, sliced
  • 1 (16 ounce) can tomatoes, chopped
  • 1 bay leaf
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt (to taste)
  • 1/8 teaspoon pepper (to taste)
  • 1/2 cup water
  • 1/2 lb shrimp
  • cooked rice

Recipe

  • 1 in a large skillet, over medium-low heat, brown flour in butter.
  • 2 add onion, garlic, green pepper, celery, and okra; sauté until tender.
  • 3 stir in tomatoes, bay leaf, parsley and salt and pepper.
  • 4 add 1/2 cup water, more if necessary.
  • 5 stir in shrimp, bring to boil; reduce heat and simmer 5 minutes,or until shrimp is done.
  • 6 remove bay leaf.
  • 7 serve over hot rice.
