Shrimp Creole Orleans

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 3/4 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 3 cups celery, chopped
  • 1 minced garlic clove
  • 1 (28 ounce) can diced tomatoes
  • 3 tablespoons brown sugar
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 bay leaves
  • 2 tablespoons lemon juice
  • 2 lbs medium shrimp or 2 lbs large shrimp, peeled and cooked
  • 3 cups hot cooked rice

Recipe

  • 1 melt butter in large skillet over medium heat and saute onion, garlic, celery, and bell pepper until tender approximately 15 to 20 minutes.
  • 2 add tomatoes, brown sugar, salt, pepper, and bay leaves and simmer for an additional 15 to 20 minutes.
  • 3 add lemon juice and shrimp.
  • 4 cover and simmer for 6 to 8 minutes.
  • 5 serve over a bed of rice.
