Shrimp Boil

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 lemons, halved
  • 3 bay leaves
  • 1/4 cup old bay seasoning, plus
  • 1 tablespoon old bay seasoning
  • 1 large head of garlic, halved horizontally
  • 3 onions, peeled and quartered
  • 1 dried red chili
  • sea salt, to taste
  • 8 sprigs fresh thyme, tied together with kitchen twine
  • 1 lb red potatoes, unpeeled, halved if large
  • 4 ears corn, husked, halved crosswise
  • 1 lb large shrimp, unpeeled, deveined (shells split lengthwise)
  • hot sauce

Recipe

  • 1 fill a large stockpot with 4 quarts water. squeeze lemons into water, add rinds.
  • 2 add bay leaves, seasoning, garlic, onions, chile, 1 1/2 teaspoons salt, and thyme.
  • 3 bring to a boil, reduce heat, simmer 10 minutes.
  • 4 add potatoes, simmer 12 minutes.
  • 5 add corn, simmer 5 minutes.
  • 6 add shrimp: cover and simmer until opaque, 3 to 4 minutes.
  • 7 transfer to bowl. sprinkle with salt; serve with hot sauce and lemon wedges.
