Herbalicious Shrimp Dip
Ingredients

- 1 pound cooked peeled shrimp, chilled
- 3 green onions, coarsely chopped
- 1 small onion, coarsely chopped
- 1 tablespoon chopped fresh tarragon
- 1 1/2 teaspoons dried parsley
- 1 teaspoon minced fresh rosemary
- 1/2 teaspoon chili powder
- 1 teaspoon lemon juice
- 1 tablespoon finely grated carrot
- 1 cup low-fat mayonnaise
- 1 cup low-fat sour cream
- salt and pepper to taste

- add shrimp, green onions, onion, tarragon, parsley, rosemary, chili powder, and lemon juice to the jar of a blender or food processor; process the mixture until shrimp are finely chopped.
- scrape the chopped shrimp mixture into a bowl and stir in the carrot, mayonnaise, and sour cream, mixing until well blended. season to taste with salt and pepper. chill at least 1 hour before serving.
