grilled marinated shrimp

Ingredients

  • Servings: 6
  • 1 cup olive oil
  • 1/4 cup chopped fresh parsley
  • 1 lemon, juiced
  • 2 tablespoons hot pepper sauce
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 pounds large shrimp, peeled and deveined with tails attached

  • in a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. reserve a small amount for basting later. pour remaining marinade into a large resealable plastic bag with shrimp. seal, and marinate in the refrigerator for 2 hours.
  • preheat grill for medium-low heat. thread shrimp skewers, piercing once near the tail and once near the head. discard marinade.
  • lightly oil grill grate. cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

shrimp and grits on the barbie

  • 8 slices of thick-cut bacon
  • 1 1/4 pounds uncooked medium shrimp, peeled and deveined
  • 3/4 cup chopped green onion
  • 3 large cloves garlic, crushed
  • 6 cups water
  • 1/4 cup unsalted butter
  • 2 cups quick-cooking grits
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 tablespoon barbeque sauce, or to taste

  • place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. drain and cool bacon slices on a paper towel-lined plate; crumble. reserve bacon drippings in skillet.
  • heat a stovetop grill over medium heat and cook shrimp until pink and no longer translucent in the center, 8 to 10 minutes. place cooked shrimp, green onion, garlic, and crumbled bacon in the bacon drippings left in the skillet. turn heat to low and keep shrimp mixture warm.
  • bring water to a boil in a large saucepan, melt butter in the water, stir in grits, and cook covered for 5 minutes. turn heat to low. stir shrimp mixture with bacon drippings into the grits; stir in cheddar cheese until thoroughly melted and combined. serve topped with barbeque sauce.

lemon-garlic shrimp and grits

  • 1 cup stone-ground grits
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter
  • 1 pound uncooked medium shrimp - peeled and deveined, tails left intact
  • 2 tablespoons unsalted butter
  • 2 large cloves garlic, minced
  • 1 pinch cayenne pepper (optional)
  • 2 tablespoons water
  • 1/2 lemon, juiced
  • 2 tablespoons coarsely chopped fresh parsley
  • 1/2 lemon, cut into wedges

  • bring 4 cups water to a boil in a saucepan and slowly whisk in grits, followed by salt and black pepper. reduce heat to low and simmer the grits until tender and thickened, about 30 minutes.
  • stir 1 tablespoon unsalted butter into grits, season with more salt and black pepper if needed, and remove from heat. cover pan and keep grits warm.
  • sprinkle shrimp with salt and black pepper. melt 2 tablespoons unsalted butter in a skillet over medium-high heat; cook and stir shrimp, garlic, and cayenne pepper until shrimp are pink and no longer translucent inside, 3 to 4 minutes.

saba's shrimp sandwiches

  • 3 cloves garlic, coarsely chopped
  • 2 anaheim chile peppers - stemmed, seeded, and chopped
  • 1 pound uncooked shrimp, peeled and deveined
  • 2 tablespoons lemon juice
  • 1 teaspoon seasoned salt (such as lawry's®)
  • 1/4 teaspoon black pepper
  • 1/2 bunch fresh cilantro, chopped
  • 1 (8 ounce) loaf french bread, cut into 4 pieces, split and toasted

  • 1 tablespoon vegetable oil
  • 1/4 cup sliced green onions
  • 4 cloves garlic, minced
  • 12 ounces cooked shrimp, tails removed

  • whisk the paprika, garlic, italian seasoning, lemon juice, olive oil, pepper, basil, and brown sugar together in a bowl until thoroughly blended. stir in the shrimp, and toss to evenly coat with the marinade. cover and refrigerate at least 2 hours, turning once.
