Rice Paper Roll-ups

Ingredients
- 20 large shrimp, cooked (or crab or smoked salmon)
- 20 rice paper sheets, softened
- 1 mango, cut into fine strips
- 1 carrot, cut into thin strips and blanched for 30 seconds
- 1 red pepper, cut into thin strips
- 1 cup bean sprouts
- 20 large cilantro leaves
- 20 mint leaves
- 20 pieces boston head lettuce
- 20 chives
- 1/4 cup rice vinegar
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 tablespoons sugar
- 1/2 teaspoon chili-garlic sauce
Recipe
- 1 mix last 5 ingredients to make sauce and let sit.
- 2 assemble wrappers starting at bottom third of wrapper in order.
- 3 1 shrimp, strip mango, strip carrot, strip red pepper, bean sprouts, cilantro leaf, mint leaf, lettuce in the middle (can be inside or outside).
- 4 roll up and tie with a chive.
- 5 serve with dipping sauce.
