Rice Paper Roll-ups

Ingredients

  • 20 large shrimp, cooked (or crab or smoked salmon)
  • 20 rice paper sheets, softened
  • 1 mango, cut into fine strips
  • 1 carrot, cut into thin strips and blanched for 30 seconds
  • 1 red pepper, cut into thin strips
  • 1 cup bean sprouts
  • 20 large cilantro leaves
  • 20 mint leaves
  • 20 pieces boston head lettuce
  • 20 chives
  • 1/4 cup rice vinegar
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 2 tablespoons sugar
  • 1/2 teaspoon chili-garlic sauce

Recipe

  • 1 mix last 5 ingredients to make sauce and let sit.
  • 2 assemble wrappers starting at bottom third of wrapper in order.
  • 3 1 shrimp, strip mango, strip carrot, strip red pepper, bean sprouts, cilantro leaf, mint leaf, lettuce in the middle (can be inside or outside).
  • 4 roll up and tie with a chive.
  • 5 serve with dipping sauce.
