Shrimp Avocado Pasta Salad

Ingredients

  • Servings: 4
  • 1/3 cup olive oil
  • 2 teaspoons dijon mustard
  • 1/3 cup fresh lemon juice
  • 3 cups farfalle pasta, cooked
  • 1 cup cooked shrimp, peeled
  • 1/2 cup cherry tomatoes, cut in half
  • 1 lb baby spinach, washed drained
  • 2 shallots, minced
  • 1 avocado, peeled, chopped
  • 1/4 cup feta

Recipe

  • 1 for the dressing, mix olive oil, dijon mustard, and lemon juice together. set aside.
  • 2 mix cooked pasta, shrimp, cherry tomatoes, spinach, shallots, avocado, and feta together; toss.
  • 3 add dressing and toss; serve or chill.
