Shrimp Avocado Pasta Salad

Ingredients

- 1/3 cup olive oil
- 2 teaspoons dijon mustard
- 1/3 cup fresh lemon juice
- 3 cups farfalle pasta, cooked
- 1 cup cooked shrimp, peeled
- 1/2 cup cherry tomatoes, cut in half
- 1 lb baby spinach, washed drained
- 2 shallots, minced
- 1 avocado, peeled, chopped
- 1/4 cup feta
Recipe
- 1 for the dressing, mix olive oil, dijon mustard, and lemon juice together. set aside.
- 2 mix cooked pasta, shrimp, cherry tomatoes, spinach, shallots, avocado, and feta together; toss.
- 3 add dressing and toss; serve or chill.
