Ingredients
- Servings: 4
- 2 tablespoons olive oil
- 1 lb mushroom (i like the baby portabella)
- salt
- fresh ground black pepper
- 1/2 cup green onion, sliced
- 2 lbs medium shrimp, peeled, cleaned, deveined
- 2 tablespoons chopped garlic
- 2 cups spinach
- 1 pint grape tomatoes
- 1 lb cooked angel hair pasta
- 4 ounces parmesan cheese, grated
- 1/4 cup dry basil
- 1 tablespoon dried parsley
Recipe
- 1 in a large saute pan, add oil and mushrooms, and cook for 3 minutes.
- 2 add green onions, salt and pepper, and cook for another minute.
- 3 add the shrimp, saute for three minutes.
- 4 add the garlic, spinach, and tomatoes, saute for three minutes.
- 5 mix the pre-cooked pasta with the shrimp and vegetables. add the basil and 1/2 of the parmesan cheese.
- 6 serve garnished with parsley and leftover parmesan cheese.
