Shrimp And Veggie Pasta

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 lb mushroom (i like the baby portabella)
  • salt
  • fresh ground black pepper
  • 1/2 cup green onion, sliced
  • 2 lbs medium shrimp, peeled, cleaned, deveined
  • 2 tablespoons chopped garlic
  • 2 cups spinach
  • 1 pint grape tomatoes
  • 1 lb cooked angel hair pasta
  • 4 ounces parmesan cheese, grated
  • 1/4 cup dry basil
  • 1 tablespoon dried parsley

Recipe

  • 1 in a large saute pan, add oil and mushrooms, and cook for 3 minutes.
  • 2 add green onions, salt and pepper, and cook for another minute.
  • 3 add the shrimp, saute for three minutes.
  • 4 add the garlic, spinach, and tomatoes, saute for three minutes.
  • 5 mix the pre-cooked pasta with the shrimp and vegetables. add the basil and 1/2 of the parmesan cheese.
  • 6 serve garnished with parsley and leftover parmesan cheese.
