Mary Rose's Jambalaya

Ingredients
- 3 slices bacon, chopped
- 1/4 cup chopped onion
- 3/4 cup green pepper, chopped (optional)
- 1 garlic clove, minced
- 3 1/2 cups chopped tomatoes
- 1 cup chicken broth
- 1/2 cup wine (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon basil
- 1/2 teaspoon thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon tabasco sauce
- 1/2 teaspoon marjoram
- 2 cups meat (eg shrimp, chicken, ham, sausage etc) or 2 cups seafood (eg shrimp, chicken, ham, sausage etc)
- 1 cup uncooked rice
Recipe
- 1 saute bacon, onions, peppers and garlic until tender. add tomatoes. add chicken broth, wine and seasonings. bring to a boil and add rice. reduce to a simmer - stirring occasionally and checking the liquid level, adjusting if necessary. when rice is cooked, add meat and/or seafood and heat through quickly.
