Mary Rose's Jambalaya

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 3 slices bacon, chopped
  • 1/4 cup chopped onion
  • 3/4 cup green pepper, chopped (optional)
  • 1 garlic clove, minced
  • 3 1/2 cups chopped tomatoes
  • 1 cup chicken broth
  • 1/2 cup wine (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon basil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon tabasco sauce
  • 1/2 teaspoon marjoram
  • 2 cups meat (eg shrimp, chicken, ham, sausage etc) or 2 cups seafood (eg shrimp, chicken, ham, sausage etc)
  • 1 cup uncooked rice

Recipe

  • 1 saute bacon, onions, peppers and garlic until tender. add tomatoes. add chicken broth, wine and seasonings. bring to a boil and add rice. reduce to a simmer - stirring occasionally and checking the liquid level, adjusting if necessary. when rice is cooked, add meat and/or seafood and heat through quickly.
