Mediterranean Chopped Salad With Shrimp And Chickpeas

Ingredients

  • Servings: 4
  • 1/2 head romaine lettuce, cut crosswise into thin strips (8 cups)
  • 1 lb cooked peeled and deveined medium shrimp, cut in half crosswise
  • 1/2 english cucumber, chopped
  • 1 (15 1/2 ounce) can chickpeas, rinsed
  • 1/2 medium sweet onion, chopped (such as vidalia or walla walla)
  • 3/4 cup crumbled feta (about 3 ounces)
  • 1/2 cup pitted kalamata olive, halved
  • 2 cups pita chips, broken into pieces
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • kosher salt and black pepper, to taste

Recipe

  • 1 in a large bowl, add the lettuce, shrimp, cucumber, chickpeas, onion, feta, olives, and pita chips to the oil and vinegar.
  • 2 add 1/4 teaspoon each salt and pepper, and toss.
